That depends on how much flicker you want to accept in your display.
Film does use 24 individual frames per second, but that image is
chopped by shutter 2 or more times per frame. Thus raising the
apparent frame rate.

If you use interpolation between frames, in-betweening, will also make low
frame rates look better.

In my opinion 30 fps is good, 60 fps better, and anything above 120 fps
you have reached the limit of diminishing returns.

The speed you need for feedback quite lower. For most sense modalities
response that happens in less than 100 mS of stimulus will seem like
no delay has occurred.

There is are some studies, on interface design, that I would like go
give references to, but I cannot locate them right now.
