I ran across your group from a message posted to the wear-hard list,
and the first thing I noticed here was your call for microcontroller
designers. My own experience has so far been with 8-bit mcu's (the
8051-series), but I discovered a new mcu a few weeks ago which may or
may not fit your needs. The Atmel AVR series are 8-bit RISC-based
mcu's which have up to eight 10-bit ADC's in a 44-pin PLCC package or
a 40-pin DIP package. You can get these with up to 16Mb of flash
and 512 bytes of ram onboard. Unfortunately there's no
direct provision for external ram, but I would think you wouldn't need
it. There's also a development board for this series which handles
all of the DIP packages, down to the 8-pin MCU.
If you're interested, here's the link to the MCU's:

I'm gong to read a bit more through the messages, but can someone tell
me how many channels of ADC you were looking for? If this mcu doesn't
do the trick, maybe I can dig up something else.
